Fried Chicken Escalope


Following are the ingredients required to make this dish;

·   8 pieces of boned and skinned chicken – 1.5 kg

·   White bread with crusts removed ( best if it is two days old) – 1 small loaf

·   Dijon mustard – 1 tbsp

·   Chopped fresh herbs – 1 tbsp

·   Eggs beaten – 2

·   Sunflower oil – for frying


This is called the shallow fry method to prepare chicken for frying.

1. Starting off, you need to clean the chicken pieces by removing skin and tendons from it. Next you need to pound the chicken piece with a rolling pin after putting them between plastic food wrap or parchment paper. This will flatten the chicken pieces evenly to about 1 cm thin. These flattened pieces are called escallops.

2. You need to dice the bread loaf and put the diced pieces in a food processor. Process this for some time until you get fine breadcrumbs.

3. Season the flattened chicken pieces with salt and pepper to taste. Brush the chicken pieces with mustard and sprinkle chopped fresh herbs on top.

4. Dip the scallops into eggs and coat both sides.

5. Dip into breadcrumbs and fry until brown.

Southern-fried Chicken


·   Skinless, boneless chicken breasts – 2

·   Skinless, boneless chicken thighs – 2

·   Salt – 1 tsp

·   Black pepper – 1 tsp

·   Cayenne pepper – 1 pinch

·   Buttermilk – 150ml

·   Fresh white breadcrumbs – 150 g

·   Sunflower oil – for frying


1.       Slice every breast and thigh piece diagonally and make 4 pieces.

2.       Mix mustard, salt, pepper and cayenne together and brush it over the chicken pieces.

3.       Place these chicken pieces in a bowl of buttermilk to coat.

4.       Coat the buttermilk coated chicken in breadcrumbs and fry.

5.       Sprinkle with salt and serve.

Original Fried Chicken


·   Egg – 1

·   Milk – 3 cups

·   Flour – 1 cup

·   Fine breadcrumbs – 3 cups

·   Salt – 1 tsp

·   Garlic powder – 1 tsp

·   Onion powder – 1 tsp

·   Paprika 1 tsp

·   Black pepper – 4 tsp

·   Cooking oil – 6 to 8 cups

·   Chicken cut in pieces – 1

·   Red chili powder – 2 tsp

·   Crushed onion – 1 tbsp


This is a deep-fried method of making fried chicken.

1. Mix eggs and milk in a bowl to make batter.

2. Add flour, breadcrumbs and seasonings in another bowl and mix.

3. Dip chicken pieces in the flour then batter and then again in the flour.

4. Deep fry the chicken pieces until golden brown and serve with ketchup.

Deep Fried Chicken


·   Unsalted butter – 115g

·   Lemon juice – 1 tbsp

·   Chopped tarragon – 2 tbsp

·   Skinless, boneless chicken breasts – 4

·   Egg – 1

·   Fresh white breadcrumbs

·   Sunflower oil – for frying


1. Mix butter, lemon juice and tarragon in a bowl.

2. Add salt and pepper to the mix.

3. Flatten chicken pieces to make chicken escallops.

4. Roll chicken fillet into butter paper.

5. Coat chicken fillet in eggs first and then breadcrumbs.

6. Fry and serve.

Fried Spring Chicken


·   Spring chicken – 1

·   Oil – 2 tbsp

·   Lemon juice – 1 tbsp

·   Salt and pepper to taste

·   Cayenne – 1 pinch

·   Finely chopped garlic – 1 clove

·   Finely chopped parsley – 1 tbsp

·   Ground ginger – ½ tsp

·   Fresh white breadcrumbs

·   Lemon quarters for garnish


1. Cut the spring chicken into 6 pieces. 2 wings, 2 legs and 2 pieces of breast.

2. Mix one tablespoon of oil with the lemon juice, salt, pepper and a little cayenne.

3. Add chopped garlic cloves, ground ginger and parsley to the mix.

4. Marinate the chicken in the mixture for 30 minutes.

5. Drain the chicken pieces from the mixture and coat with breadcrumbs.

6. Fry and serve.
